Berry Granola

 

I made a batch of this super easy delicious Granola this week and have decided instead of taking flowers or candles to peoples houses, that I would give them one of these pots.   There are so many Granola’s out there but this one takes so little time and is far and away tastier than shop bought stuff.  

It also fills the kitchen will the most gorgeous smell of cinnamon. 

 

Ingredients

 
  • 10 oz mixed nuts (e.g. almonds, hazelnuts, pecans, cashews)
  • 16 oz rolled oats 
  • 1 ½ oz desiccated coconut flakes 
  • 6 ½ oz maple syrup 
  • 2 tsp ground cinnamon 
  • ¼ tsp ground nutmeg 
  • ½ tsp salt 
  • 2 tsp vanilla extract 
  • 4 oz dried blueberries (Waitrose)
  • 1 oz freeze-dried strawberries (I used my own over dried berries)
  • 1 oz freeze-dried raspberries (same as above although you can now buy both in Waitrose)
 
 

 

Preparation

 
  1. Preheat oven to 275°F. Line a baking sheet with parchment and set aside.
  2. Place nuts into a bag and crush them with a rolling pin to whatever size of choice.. Transfer to a large bowl and set aside.
  3. Place oats, coconut, maple syrup, cinnamon, nutmeg, salt and vanilla into mixing bowl and mix together. Transfer to bowl with reserved chopped nuts and stir to combine.
  4. Transfer granola mixture onto prepared baking sheet and distribute evenly. Bake for 35 minutes (160* C), stirring every 10 minutes to ensure even browning.
  5. Once granola is completely dried, transfer to a large bowl. Weigh in dried blueberries, strawberries and raspberries and stir through granola to combine. Allow to cool, transfer to an airtight container and store until ready to use.

As you can see Waitrose now sells freeze dried strawberries and raspberries so if you can’t be bothered to oven dry them yourself you can buy them which is super easy.
